Ck3 without dlc is fine. Though dont miss out on the sale ;) I've been playing without any DLC just fine. Mostly the total conversion mods, though (the base game gets old quickly). Royal court expansion is meh anyway, tours and tournaments is fun but the game is totally fine without it, you won’t be missing a lot.
